Apple Pancake

I haven’t made this for a while!  It turned out great in my new ScanPan!  I don’t have an exact recipe for the apples.  I peeled and cut up 2 medium apples and sauteed them with butter (maybe 3 or 4 TBS) and generous sprinkle of cinnamon and a chunk of brown sugar (1/4 to 1/3 cup).  As this was simmering, I made my buttermilk pancake batter from another post.  In the past I followed a recipe that used Bisquick which I really can’t stand to use anymore after mastering my own buttermilk recipe.  Using my own buttermilk batter made it even better than I remembered.  So light and delicious!

Here is how it turned out.

The lightness of the buttermilk batter makes it perfect for this recipe.  The heat needs to make its way slowly through the apples to the batter on low heat until it is sort of cooked except for the top that gets cooked in the broiler.
