Texas Sheet Cake

I have many this many times but I found this variation on a website that has a name so close to mine I thought I would check it out.  It is called this is how i cook.com.  She has some pretty cool stuff.  This was a recipe I found there.  The only difference from mine is that she uses coffee instead of water and adds chocolate over the hot cake before the frosting and then returns to the oven for 5 minutes after it is turned off.  My mom would sometimes add nuts.  Maybe if I were to add nuts I would do it during this step.  I don’t think the chocolate chips or coffee are necessary or make it any better.  Maybe it is just what I am used to.  Also I made only a 1/2 recipe which is actually plenty.

1 stick of butter melted with 1/2 cup water or coffee and 2 tablespoons of cocoa powder stirred until smooth and boiling.

Pour into a bowl over 1 cup of sugar, 1 cup of flour and mix into a ball like this.

Mix together 1/4 cup buttermilk, 1/2 tsp baking soda, 1 tsp vanilla and 1 egg and mix into the chocolate mixture.

Pour into a greased pan.  I just got this one at Anthropologie, so cute!  It is about 8 or 9 inches square sprayed with coconut oil spray.

Bake at 400 for 16 to 20 minutes.  I did 20 and it was more cooked than I wanted but still good.

Sprinkle with 1/2 cup chocolate chips or in my case some chocolate bars I had.

While it was baking I made the frosting from 4 TBS of butter, 2 TBS of cocoa and 3 TBS of milk and 1 tsp vanilla.  Heat and stir in the same pot used before and then add 2 cups of powdered sugar.  Pour over hot cake.

The frosting melts into the cake and then hardens again as it cools.

If you haven’t had this before you have to try this at least once.  Who doesn’t like warm chocolate cake with warm chocolate frosting?
