Sauteed Vegetables (light version)

I got my teeth whitened the other day and they said I had to eat light colored foods for 2 days!  How is that possible?  It was torture.  I walked by the farmers market and picked up a potato, an onion, a yellow squash, fresh garlic, a white bell pepper and a yellow heirloom tomato.  It was all cut up and sautéed in olive oil and seasoned it with Herbes De Provence.  This is what I made for lunch.  It was really good.  I ate it with cottage cheese.  Kind of weird but it worked.  So glad that is over.  I love colorful foods!
