This was experimental and delicious. I sautéed some shallots in olive oil to mix into scrambled eggs but I decided to just crack the eggs right over the shallots and cook them slowly. The caramelized shallots were imbedded into the egg crust and the top had melted cheddar with fresh oregano. It was such a good combination. Kind of rich for breakfast but really good! I ate this with a toasted crumpet from Trader Joes. My new favorite thing. I am sure there will be a post in the future of me trying to make crumpets. They are fascinating!
