Beef Tacos and Shishito Peppers

Roger started cooking up some ground beef with an onion and some bell pepper for tacos.  It was my job to figure out how to make it taste like taco beef.  I added some salt and pepper and cumin and oregano and garlic but it didn’t taste right yet.  I was trying to figure out what it was missing and came across this amazing smoked Spanish paprika I bought online from a  cool spice shop.  All I can say is WOW!  The smoked paprika made all the difference.  I had heard that the practically flavorless red paprika we sprinkle on deviled eggs is not what paprika is all about.  This is what paprika is all about!  Such a cool flavor!  These tacos have 2 corn tortillas lightly sautéed in oil with lettuce, avocado, salsa, sour cream, queso cotija and cilantro.  The shishito peppers were cooked in olive oil on high heat.  They blister up pretty quickly and then I turned them over to cook on the other sides.  I just added salt once they were done.  These are delicious.  I ate a whole bag of these one day by myself.  I bought more at Trader Joes but the second bag had a bunch of hot ones in it.  They say 1 in 10 are extra hot like jalapeños but the first bag had none the second bag had about 8.  Anyway, this killed a little of my enthusiasm for these.  But the not so hot ones are so good!  Now I eat them with caution hoping for a sweet one.
