I have made the Apple Pancake many many times, but this morning I had lots of blueberries so I thought I would see what happens. I sautéed the blueberries in butter and sugar and some cinnamon. Once I had a nice hot boiling pan of blueberries in syrup I poured over one recipe of my buttermilk pancake recipe and cooked on low heat for about 5 to 10 minutes. I don’t remember exactly but you can kinda tell when it is starting to cook through to the top. Make sure the heat is low so it doesn’t cook to fast and burn the bottom. Hold the pan under the broiler for a minute or two until it cooks through and browns a little. Flip over carefully onto a plate and this is what you get. This came out perfect. I didn’t know what to expect but was pretty impressed with myself on this!
