Mint and Lime Mojitos

By New Years Eve we were pretty worn out from all the holiday fun and didn’t end up going to Mary’s New Years Party at her Times Square office.   So we stayed in our apartment made delicious sandwiches on baguettes, Italian Wedding cookies with Whiskey Vanilla frosting and Mint and Lime Mojitos.  (Roger and I binged watched a bunch of episodes of Homeland which was totally worth it!)  But before all that we had some fun experimenting in the kitchen with Tabitha and Becca.  We squeezed lots of fresh limes and bought tons of fresh mint.  The recipe we used was 1/2 ounce of lime juice with sugar dissolved in about 2 or 3 teaspoons or more to taste.  We added a handful of mint leaves which were muddled into the juice then filled it 2/3 full with crushed ice, added 1 Tbs white rum and filled it to the top with seltzer water.  We added a few raspberries, blackberries and slices of lime.  So fresh and yummy.
