It seems every time I buy a baguette it ends up rock hard the next day. This is what I do to not feel guilty, plus I love french toast! I use milk, eggs, vanilla (lots) and cinnamon for the mixture to soak the bread in.

Chicken, broccoli, roasted tomato, herbed cheese omelette
Omelettes are a window to what is in my refrigerator at the moment. Fairway has delicious Australian roasted tomatoes that I like to buy. I had Boursin cheese which was interesting in the omelette, too. This one was kind of chunky and I think the best ones I have made have more fresh herbs and bacon.
