Chocolate Dipped Honeycomb Candy

This candy is tricky to get right but delicious when it works out.  This candy can also be crushed and covered over a german chocolate cake with whipped cream.  My Grandma Grace used to make the cake and we couldn’t find the candy in the stores where she bought it so we use this now.  She used a coffee flavored candy but this can take on a coffee flavor when the sugar burns a little.  I need another post if I make that someday.  As for this time, I dipped it in chocolate since I had lots of good melting chocolate from the baking supply store.

1 cup sugar

1 cup dark corn syrup

1 tablespoon cider vinegar

1 tablespoon baking soda

Heat sugar, corn syrup and vinegar to boiling in a 2 quart saucepan over medium heat, stirring constantly, until sugar is dissolved.  Boil, without stirring, to 300 on candy thermometer (or cracked thread stage) Remove from heat.  Quickly stir in baking soda thoroughly.  Pour mixture into pan lined with parchment paper.  Do not spread; cool.  Break into pieces and dip into melted chocolate.  Cool on parchment until hardened.
